Cooking in a Camper Recipes

I thought it would be a good idea to invite people to post their favourite recipes for culinary specialities in this forum. When we get enough the club might collate them into a Cooking in a Camper Cook Book.

We would be grateful for all contributions covering starters, main courses and sweets and even and unusual beverages.

Ingredients
 
4 Medium Chicken pieces (diced)
2 tablespoons of seasoned flour
1.5oz of butter (largish knob)
1 tablespoon Olive Oil
2 Small Onions, Chopped
1 clove of garlic (Crushed or chopped)
1 or 2 teaspoons curry powder (to your taste)
0.5 teaspoon ground ginger
0.5 teaspoon ground cinnamon
1 tablespoon chutney
A small handful of raisins or sultanas
1 cup of milk or chicken stock
Salt and Pepper
1 Eating Apple, peeled and chopped
1 cup yoghurt
 
 
Coat he chicken pieces in the seasoned flour. Heat butter and oil in a large pan and fry the chicken pieces until brown all over. Remove the chicken and set aside. Fry gently the onions and garlic in the remaining oil until just turning gold, stir in the curry powder, ginger, cinnamon, chutney, dried fruit and milk/stock. Bring back to the boil and then put back the chicken, season and add the apple pieces then simmer until the chicken is cooked. Stir in the yoghurt and simmer for another 5 minutes. Serve with noodles or rice.

Ingredients

8 rashers of Bacon

2 cloves of garlic

2 tablespoons of Olive Oil

Fresh Tagliatelle

Creme Fresh

Pesto Sauce

Parmesan Cheese

This is a quick and very tasty dish.  Chop the bacon into strips and fry with the crushed garlic until cooked in the Olive oil.  Cook the Tagliatelle and mix in the cooked bacon.  Poor over the creme freash and add pesto sauce to taste. Simmer for a few minutes and serve.  Sprinkle with parmesan cheese to taste.

Clear Onion Soup for 6

 

4 large Onions - peeled and finely chopped

1 tablespoon of oil for frying

1.75 pints of Vegitable Stock

1 Teaspoon of Yeast Extract

Black Pepper

 

Heat the oil in a large saucepan and fry the finely chopped onions gently until just softened but not browned. Add the stock and yeast extract and stir. Season with a generou amount of black pepper.  Bring to the boil, stirring, then cover and simmer unttil the onions are really soft. Serve hot.
