Ingredients
4 Medium Chicken pieces (diced)
2 tablespoons of seasoned flour
1.5oz of butter (largish knob)
1 tablespoon Olive Oil
2 Small Onions, Chopped
1 clove of garlic (Crushed or chopped)
1 or 2 teaspoons curry powder (to your taste)
0.5 teaspoon ground ginger
0.5 teaspoon ground cinnamon
1 tablespoon chutney
A small handful of raisins or sultanas
1 cup of milk or chicken stock
Salt and Pepper
1 Eating Apple, peeled and chopped
1 cup yoghurt
Coat he chicken pieces in the seasoned flour. Heat butter and oil in a large pan and fry the chicken pieces until brown all over. Remove the chicken and set aside. Fry gently the onions and garlic in the remaining oil until just turning gold, stir in the curry powder, ginger, cinnamon, chutney, dried fruit and milk/stock. Bring back to the boil and then put back the chicken, season and add the apple pieces then simmer until the chicken is cooked. Stir in the yoghurt and simmer for another 5 minutes. Serve with noodles or rice. |
